Considered one of the best burger places in the country, winning prestigious awards

Get ready to know a top burger place, with such delicious recipes that will make you want to go eat before you even finish reading this article. Chef Rafael Zacarias transferred his high gastronomy knowledge to hamburgers, achieving a totally differentiated product. No wonder, BRAVO Burger & Beer is considered one of the best in the industry in the country, winning prestigious awards.

Imagine a Wagyu/Angus Premium Burger (180g) with “mineiro” cheese, caramelized purple onions, crunchy bacon and handmade grain mustard, fine herbs, Sicilian lemon and honey. All this with a delicious Australian bread. This is the “home-grown”, the “BRAVO Burger”. Also worth noting is the “Carcamano”, which carries, among other ingredients, caramelized mushrooms and a gorgonzola mayonnaise, white wine and black pepper. Or the “Fale Sério” with brie cheese and bacon chutney with green apple.

The whole menu is signed by Rafael, who states that the great differential are the sauces, as we can see in “Feirinha”, made with mustard, molasses, herbs, homemade mayonnaise and Sicilian lemon. Another fact is that he is very fond of researching about the products made in Bahia and ensures that there is now a responsible production movement, in which the rural producer has the concern and care of bringing a “clean”, natural, organic product and much more accessible to the consumer.

“Since 3 years ago until now, many chefs from Salvador have traveled to research products around the state and I include myself. They are trips to the semi-arid, to Bahian recôncavo {…}. I search for a lot of good things that are not used yet. Bahia is very big, we have practically all Brazil biomes here”, he explains.

Rafael Zacarias takes all these ingredients found on his trips to his burger place. Today, he is able to set up a menu with a good part of regional products. The meats are produced in the south and southeast of the country, but the organic cheeses and vegetables are from Bahian producers. A great example is the unusual shake of coconut and tapioca with licuri, cocoa 60 and AMA nibs, super-tasty.

So much study, trips and hands-on!

Rafael Zacarias is the kind of young man with a spark in his eyes who enjoys being in permanent learning. He has graduated in Rio de Janeiro, has been to kitchens like Fasano Al Mare, also in the capital of Rio de Janeiro, went working in Australia until returning to Salvador and leading the restaurant Pereira in Itaigara, staying there for 3 years. Altogether, he has 12 years of profession and a career made over the Italian and contemporary cuisines.

Bravo’s story is recent. It all started in the summer of 2015, when there was an opportunity to participate in a street fair. Bravo didn’t exist yet. Zacarias developed a hamburger that was a success. To this day, this is the best-selling product, the “Bravo Burger”. Then, with the encouragement of friends, he decided to rethink his professional life.

“Then I thought: if I get the Italian and contemporary cuisines know-how that I already have and invest in a burger place, then may it be the best possible”, recalls Rafael.

In August of the same year, he opened the first store in Pituba, in front of the square where it all began. Since then, BRAVO Burger & Beer already has four stores, in addition to having won several awards. In 2016/2017 won as the best hamburger in Brazil, the only one outside São Paulo, in Melhores do Ano Prazeres da Mesa (Best of the Year Table Pleasures ) 2017 Awards, being indicated again in other years. In 2019, it was among the top five in Brazil. In 2017/2018 he won the Veja Salvador – Comer & Beber award, and again in 2019.
